Of course my family makes me happy but that's a given. Whenever I am stressed and just having a horrible day, nothing makes me happier than reading a good book in a hot bubble bath. Calms me right down!
Last night we rode trax downtown to see the pretty lights at the Temple. It was freezing cold but so much fun. We made sure to bundle up and enjoyed our family time. Stephanie was even smart enough to make some hot cocoa and put it in a thermos. Definitely came in handy for the kids. Oh, and don't mind Kase's Santa hat. It's almost become a tradition for my mom to take the kids to the dollar store every time we/they visit. So that is one of the "many" dollar toys he picked out. Also, look at that cute picture below of my lover boy... he sure is pretty dang cute huh?!!

I know i've posted a lot of pictures of my sisters and I lately but usually i'm not in any pictures alone so this is what you get. Also, we've taken TONS of pictures of us three. (and I love showing off my girlies)
Baked ChickenTaquitos
from My Kitchen Cafe
4 ounces cream cheese, softened
1/4 cup green salsa
1 tablespoon fresh lime juice
1/2 teaspoon cumin
1 teaspoon chili powder
1/2 teaspoon onion powder
1/4 teaspoon garlic powder
3 tablespoons chopped cilantro
1 green onion, sliced finely (white and green parts to equal about 2 tablespoons)
2 cups shredded cooked chicken 1 cup grated monterey jack cheese
small yellow or white corn tortillas
kosher salt
cooking spray
Heat oven to 425 degrees. Line a baking sheet with foil and lightly coat with cooking spray.
In a medium-sized bowl, mix softened cream cheese, green salsa, lime juice, cumin, chili powder, onion powder and garlic powder. Stir to combine and then add cilantro and green onions. Add chicken and cheese and combine well.
Working with a few tortillas at a time, place 3-4 between two damp paper towels and microwave for 30-45 seconds, until tortillas are soft and pliable and don’t crack while rolling. Place 2-3 tablespoons of the chicken mixture on the lower third of a soft tortilla, keeping it about 1/2 inch from the edges. Then roll it up as tight as you can.
Place filled taquitos seam side down on the baking sheet, making sure they don’t touch each other. When ready to bake, spray the tops lightly with cooking spray or an oil mister and lightly sprinkle some kosher (coarse) salt on top.
Place pan in oven and bake for 15-20 minutes or until crisp and the ends start to get golden brown. Serve immediately. Taquitos can be dipped in in salsa, sour cream, guacamole, or any other combination you can dream up.
I have made these several times in the last couple months. They have become a family favorite. Even my kids love them! Just ask my sister in law, Jenna, you can't go wrong with any recipe you find on this website. They are all incredible!

We (unsuccessfully) attempted to take some family pictures in the freezing cold today. As you can see, they didn't turn out so we are trying again tomorrow. Still, I wanted to post them because they are cute and it was a fun memory.
I love more than anything having my family around me. I am so lucky to have such supportive and amazing people in my life. I only hope they know and feel how much I love them. The laughter we share is priceless. I love how we can piss each other off then turn around and laugh at the same exact thing we were mad at. Nothing compares to the happiness I have in my life! I truly am a lucky girl.

Never ever did I ever in a million years think this day would come. I was dead set on my long hair for life. It's been 8 years since I've had a real haircut other than a simple trim. My good friend, Jamie had the pleasure today.. and she did such a good job. I love it!!! So I just thought I'd share my new SHORT hair with you all :)

I have so many friends I consider a "best friend." That makes it so hard to narrow it down and to post so many pictures is just too much work right now. So to all my friends (and family) I LOVE YOU!!! You're all my favorite!
However, I did post a picture of 2 of the most beautiful, AMAZING girls alive! My sisters!! They are definitely my best friends and I don't know where I would be without them. I know I can tell them anything and not be judged. They love me no matter what. I hope they know how much they are loved by me.
I'm such a lucky girl to have all the best friends in my life that I have!
